As part of my work with Premier Protein and their #MyOneMore Campaign, I thought I’d come up with MY ONE MORE Girl Scout cookie alternative– especially after I ate half a sleeve in one sitting– mindlessly in front of the TV.  Yep, it happens to me, too…sometimes!

So here we go. This is so easy it’s stupid but the satisfaction is not to be questioned. I don’t know what it is about changing the shape of something from a bar to a cookie that completely transforms its all around appeal, but it does– LIKE MAGIC!

I mean, the bars are great and perfect for a quick fiber and protein packed snack, especially on the run, but melting one down and turning into four individual cookies takes it from a snack to an indulgence, and it’s divine!

So, here you go…

STEP ONE: Remove the Premier Protein Chocolate Mint Fiber Bar from its wrapper and put it in a microwave safe bowl










STEP TWO: Microwave it for 25 seconds

STEP THREE: Stir and place 4 equal-sized spoonfuls on a sheet of parchment paper, then press into cookie shapes. 

STEP FOUR: Allow to cool for about 5 minutes– or stick ’em in the fridge or freezer to speed up the process.

Yeah, it’s that easy. 

You can also make these in batches and store them in the freezer just like the real thing…I mean, if you’re into frozen thin mint cookies, like me!
